Applied management student and 2024 baking & pastry arts graduate Kendal L. Johnson, of Scranton, was among those receiving awards at the 13th annual Cupcake Challenge at Keystone College.
The April 30 event celebrated America’s 250th birthday and featured three categories: home bakers, junior bakers and professionals. Johnson, who has launched Kendal’s Cakery Kreations, received the “Best Taste” award among the professionals.
She offered six cupcake varieties: apple pie (vanilla cake filled with apple pie filling and iced with cinnamon buttercream), rocket pop (vanilla cake iced with blue raspberry, lemon and cherry buttercream), rocky road (chocolate cake filled with marshmallow cream and iced with chocolate buttercream), cosmic brownie (chocolate cake filled with chocolate fudge and iced with a fudgy chocolate buttercream), chunky monkey (banana cake filled with chocolate ganache and iced with peanut butter buttercream), and blackberry moonshine (vanilla cake filled with blackberry jam and iced with a blackberry moonshine buttercream).
Johnson was assisted at the event by classmate Amanda E. Pennington, of Wernersville, who is also a 2024 baking & pastry arts graduate and applied management student. Both Johnson and Pennington are pending May graduates.
The Cupcake Challenge raised funds for the Pancreatic Cancer Action Network.
