Ryan A. Gibson, an aviation maintenance technology major from Lansdale, shared a recipe for pink beans with white rice; Sylvia Lukpetris, a part-time member of the accounting faculty, submitted the salsa and Spanish rice recipes. Sara H. Ousby, director of diversity and community engagement, worked with Dining Services to supplement the menu with other dishes, including black bean empanadas, Beef Picadillo and pork tamales. The event, held on the second floor of the Bush Campus Center, included musical entertainment and giveaways.
