Appetizer

Spam Musubi
One of the most popular foods on the Islands, Spam will be seasoned, seared, and incorporated into a terrine of sushi rice, nori, and accompaniments to introduce you to the flavors of the region

 

Soup

Lemongrass Seafood Soup
Mildly spiced, citrus, lemongrass-infused seafood vegetable broth with shellfish and a vegetable and mushroom garnish

Ramen
Du jour, spontaneous combination of broth and meat, noodles, vegetables and toppings

 

Salad

Choice of one:

Lomi Lomi
Lime- and vodka-cured salmon with a miso-mustard-ginger dressing; served with bean sprouts, tomatoes, and scallions

Seared Tuna
Seared tuna loin with an Asian bean salad

 

Entrèes

Choice of two:

Chinese BBQ Pork
Sweet, hot, sour, Asian five-spiced braised and pulled pork with vegetable egg roll

Mahi Mahi
Oven roasted with coconut sweet potatoes and a passion fruit seafood sauce

Big Island Duck Trio
Shoyu sesame duck confit, rum-infused brined duck breast, and our own duck sausage; served with squash risotto

Huli Huli Chicken
Rotisserie chicken dry rubbed with spices ,over a wood fire and basted with a sweet sour sauce, served over bean thread noodles

 

Dessert

Prepared tableside by one of our Classical students. Options vary by region. Dessert cart offerings by our professional staff, students, and faculty.
