Mission & Objectives
Hospitality Management


Preparing students for leadership positions in the hospitality industry through hands-on experience and an emphasis on culinary skills, service management, and employee supervision.


  1. Establish and maintain high standards of sanitation as established by the SERV SAFEŠ program
  2. Demonstrate a solid foundation in techniques for food preparation, presentation, and service
  3. Describe the equipment available on the market and plan its arrangement, operation, and maintenance for efficiency and safety
  4. Plan menus; purchase, cost, and price product for profit
  5. Demonstrate creativity and sound thinking in solving management problems and in merchandising techniques
  6. Conform to established codes of ethics and demonstrate a responsible attitude expected in the hospitality industry
  7. Communicate clearly, both verbally and in writing
  8. Demonstrate a working knowledge of the factors involved in setting up and operating a food service establishment
  9. Demonstrate the ability to keep accurate food business records and understand the relationship between financial profits and good business ethics
  10. Demonstrate a working knowledge of hotel front office management and hospitality industry marketing
  11. Plan and facilitate banquets and special events
  12. Demonstrate service techniques found in various segments of the restaurant industry, including fine dining, casual dining, and quick service dining
  13. Demonstrate a working knowledge of wine service including wine/food pairing, merchandising, and wine list design
  14. Prepare a variety of alcoholic and non-alcoholic beverages
  15. Equip, stock, staff, and control a bar operation
  16. Apply knowledge of physical activities and sports in maintaining good health
  17. Demonstrate a working knowledge of management, including service, people, and facilities
  18. Demonstrate a knowledge of the fundamentals of microcomputers
  19. Develop a career portfolio
  20. Develop skills for and a commitment to the process of lifelong learning
  21. Develop skills for problem solving, decision making, and critical thinking
