Visitors Share Expertise With Hospitality Students, Faculty

School of Hospitality students and faculty benefited from visits this week by culinary experts who shared their knowledge during classes and special events. Klaus Wahl, professor of viticulture at the Technical University of Munich in Germany, and an internationally recognized expert in the field, spoke to several hospitality management classes and provided a professional development opportunity for the staff of Le Jeune Chef Restaurant. His visit culminated Wednesday evening with “A German Food and Wine Tasting,” a fund-raising event during which he shared his expertise with diners as they sampled German wine paired with elegant food courses prepared by School of Hospitality students and faculty. Also visiting this week were Genaro Gonzalez, creative services specialist for the California Raisin Marketing Board, and Dominique Homo, owner of L’Ecole du Pain (The School of Bread) in Quebec. Homo spent the morning with baking and pastry arts classes, teaching them artisanal raisin bread-making recipes. In preparation for the visit, 16 students developed their own raisin-bread recipes for a contest sponsored by the marketing board. Products were judged and winners were announced Wednesday afternoon. Students, Expert Pair for ‘A German Food and Wine Tasting’

Penn College’s School of Hospitality will host an internationally recognized wine expert on campus and, as part of his visit, will offer “A German Wine and Food Tasting” to benefit international student programs at the college. During the Oct. 7 event, Klaus Wahl, professor of viticulture at the Technical University of Munich, will share his knowledge of wine as diners experience the five tasting portions prepared by School of Hospitality students and faculty. While on campus, Wahl will also speak to students in Wine and Beverage Management and Wines of the World classes and offer professional development for Le Jeune Chef dining room staff.
Students to Help Launch ‘Local Foods Week’ at Growers Market

Penn College students will prepare free samples of dishes made with fresh, local food products at the Williamsport Growers Market on Sept. 12. Students enrolled in a Catering class offered by the college’s School of Hospitality will prepare food on-site from 8 a.m. until noon – or as long as the food lasts – as part of the regional Buy Fresh Buy Local chapter’s “Local Foods Week,” Sept. 12-18.
College Presents Teaching Awards to Three Faculty Members

Penn College honored three faculty members with Distinguished Teaching Awards at Spring Commencement ceremonies held May 16 at the Community Arts Center. The college’s highest level of recognition for a faculty member − the Veronica M. Muzic Master Teacher Award − was presented to Christine M. Kessler, assistant professor of physician assistant. Excellence in Teaching Awards were presented to Dottie M. Mathers, associate professor of medical/surgical nursing; and Frank M. Suchwala, instructor of hospitality management/culinary arts.
Hospitality Students to Staff Kitchen, Serve Guests at Kentucky Derby

More than 30 Penn College students have been selected to prepare high-end food at the 135th running of the Kentucky Derby on May 2. The annual tradition attracts more than 150,000 to Churchill Downs in Louisville, Ky., to watch the esteemed horse-racing event and take part in the surrounding festivities. Penn College students, accompanied by Chefs Paul Mach, assistant professor of hospitality management/culinary arts, and Charles R. Niedermyer, instructor of baking and pastry arts/culinary arts, will arrive in Louisville April 27. In recent years, the Penn College students have been responsible for feeding more than 25,000 guests in the village.
Library Public Forum to Tout Benefits of Buying Local Produce

Area residents concerned about where their food is grown and wishing to reduce their ecological footprint can discover the meaning of "locavore" – the Oxford American Dictionary's 2007 Word of the Year – at a public forum in Penn College's Madigan Library. The free event – "Herbivore, Omnivore, Locavore!" – will be held from 4-5 p.m. Thursday, April 23, in the library's second-floor reading loft. Chef Michael J. Ditchfield, instructor of hospitality management/culinary arts, and School of Hospitality students will discuss the health benefits and environmental consciousness of being a "locavore" – someone who buys food from farmers close to home.
Daniele Family Scholarship Established at Penn College

A family known for its popular businesses in downtown Williamsport will be providing financial-aid support for students in Penn College's School of Hospitality. Siblings Maria, Fred and Francis Daniele have established the Daniele Family Scholarship Fund, an endowed fund that will be a permanent source of scholarship awards for students. The Danieles operate Joanna’s Italian Bakery and Specialties and Franco’s Lounge in Williamsport. The businesses are named for their parents, Joanna and Franco Daniele.
Pennsylvania Avenue Restaurateur is Next Visiting Chef

Penn College will host a renowned Washington, D.C., chef and restaurateur in February as part of its Visiting Chef Series. The series invites accomplished chefs to the college’s campus to mentor and work alongside students in the college’s School of Hospitality over several days, culminating in the elaborate Visiting Chef dinner to benefit scholarship funds. Chef Robert Kinkead, chef and owner of Kinkead’s: An American Brasserie, will visit the college Feb. 25-27. The Visiting Chef Dinner, which is open to the public, will be served in Le Jeune Chef Restaurant on Feb. 27.
Food Show Winners, Fundraising Results Announced

Penn College students raised more than $1,600 for Greater Lycoming Habitat for Humanity during the annual “House for a Home” chocolate house auction Dec. 5. The event was held during the college’s Food Show, which showcases final projects of students from several School of Hospitality classes. Fourteen chocolate houses – made by students enrolled in Principles of Chocolate Works – were offered for silent auction. Students also created a variety of holiday cakes, cookie trays, candy boxes and gingerbread houses, which were sold in a live auction by Scott Younkin, of Linden, who volunteers his time for the charity event.
