Respected around the world as an authority on Cajun and Creole cuisine and culture, Chef John Folse, C.E.C., A.A.C., hosts public television's A Taste of Louisiana and owns two award-winning establishments in South Louisiana - Lafitte's Landing at Bittersweet Plantation, in Donaldsonville, and White Oak Plantation, a catering facility in Baton Rouge.
Chef Folse was featured in Pennsylvania College of Technology's Visiting Chef Series in November 1995 and February 1997. Why did he decide to return to create the "Wild Beast Feast"?
"Obviously, after one week at Penn College, you're never going to be the same if you appreciate what the College is doing in terms of preparing you people coming into our industry." Chef Folse commented. "I visit two to three culinary schools a year, but what sets Penn College apart is the unbelievable enthusiasm of its students, faculty and administration. there is just incredible feeling that something exciting is happening... and it's only going to get better. I wanted to be a part of that feeling again. What Penn College is doing is a credit to the entire culinary industry
Referred to as "Louisiana's Ambassador to the World," Chef Folse continues to spread his enthusiasm for Cajun and Creole cuisine throughout the world. Penn College is honored to be one of the stops on his international "culinary campaign."
