"QUEEN of Creole Cooking," Leah Chase, owns Dooky Chase's Restaurant in New Orleans and her success to the coveted title is no secret. Shortly after her marriage to Dooky Jr., Leah began to cook and serve some of her favorite dishes to enhance the menu items at his family's small neighborhood sandwich shop. Her recipes were an instant success. Due to increased demand, she and Dooky eventually took over the business. Now, after more than 50 years, the business has expanded to include three dining rooms and Leah is still cooking and still loving it. Guests can grab a sandwich, choose a daily lunch buffet or enjoy a leisurely dinner. Her signature masterpiece is Gumbo Z'Herbes, a springtime gumbo specialty featuring sausage and nine different types of greens. Neighborhood regulars are likely to be joined by national celebrities, chefs and politicians vying to enjoy her annual "Green Gumbo." Her first appearance as a Pennsylvania College of Technology Visiting Chef participant was in October 1999. Between TV appearances, speaking engagements and planning her next cookbook, Leah works daily greeting guests, chopping, stirring, tasting and serving her delicious Creole dishes. Penn College is honored she has taken time to make her second Visiting Chef Series appearance.
